Winemaking: Organic Pinot Noir grapes were sourced from a nearby organic grower. Whole bunch maceration for 3 weeks in concrete tank before fermentation with indigenous yeast in old barrels. Aged for 2 years in barrel before being added to domaine Pinot Noir wine that had also been aged for 2 years. Rested for a further 6 months before being bottled with no filtration, fining or added sulphur.

This Wine: This is a partly negotiant cuvée made from Pinot Noir grapes grown on red clay soils in Puligny along with domaine wine that had been aged in barrel for 2 years. 2022 was a dry vintage so this is more concentrated than the typical Dandelion style with a deeper and darker fruit profile and long mineral finish. Gastronomic and age-worthy. 

Notes on the Winemaker: Morgane from Burgundy and Christian from Australia are the duo behind Domaine Dandelion near Saint-Romain in the Côte de Beaune, Burgundy. They work 2.2 hectares of Aligoté, Gamay and Pinot Noir vines by horse or hand. Organic and Biodynamic techniques are used in the vineyard and nothing is ever added to the wines. The labels are made at an old paper mill and include pressed flowers.
