Winemaking: Organic Pinot Noir grapes from south facing, single plot of 70 years old vines planted on soils of sandstone, clay & limestone in Mavilly were harvested by hand. Whole bunch infusion in concrete tank for 7 days. Basket pressed by hand before fermentation with indigenous yeast. Aged in old oak barrels. No filtration, fining or added sulphur.
This Wine: This is the first vintage for this cuvée that is made with Pinot Noir grapes from the same plot as Rosie Red but this is slightly more concentrated and deeper. Already showing great complexity of fruit and minerals but will undoubtedly get even better over the coming years.
Notes on the Winemaker: Morgane from Burgundy and Christian from Australia are the duo behind Domaine Dandelion near Saint-Romain in the Côte de Beaune, Burgundy. They work 2.2 hectares of Aligoté, Gamay and Pinot Noir vines by horse or hand. Organic and Biodynamic techniques are used in the vineyard and nothing is ever added to the wines. The labels are made at an old paper mill and include pressed flowers.
