Winemaking: Organic / biodynamic Pinot Noir grapes grown by Ham Street in Kent were harvested by hand. 2 week whole bunch maceration in fibreglass and fermentation with indigenous yeast. Aged in old barrels for 9 months before being bottled with no fining, filtration or added sulphur. 

This Wine: Watchtower returns albeit in a different style and made with a different grape variety. This is a very light red or a darker rosé made from Ham Street's Pinot Noir grapes. Super fresh Summer wine which is full of energy and life. 

Notes on the Winemaker: Daniel and Nicola Ham were marine biologists before embarking on a natural wine adventure in what may have seemed the most unlikely of regions, Wiltshire! They purchase organic fruit from different plots around the UK and are now making some of the best local wines we have ever tried.
