Winemaking: Biodynamic Pinot Noir grapes were harvested by hand before fermentation with indigenous yeast. Aged in old oak barrels. Disgorged in October 2022. No fining, filtration or added sulphur. Zero dosage.
This Wine: A natural Champagne made from Pinot Noir (blanc de noir) which shows a ripe stone fruit and citrus flavours. A nice balance of roundness and acidity. Precise and pure. The grapes come from a south facing plot populated with many different species of butterfly, hence the name of the cuvée.
Notes on the Winemaker: Bénédicte Leroy and her partner took over her father's biodynamic farm vineyards in 2010 which are and make exquisite biodynamic Champagne from different plots with different grape varieties. The farm embodies an ecosystem complete with fauna and flora.
