Winemaking: Organic Pinot Noir and Gamay grapes were harvested by hand. Direct press before fermentation in concrete tank with indigenous yeast. Bottled before this process was complete in order to create fizz in the bottle (Ancestral winemaking technique - Pet Nat). No filtration, fining or added sulphur.
This Wine: Natural sparkling wine with a hazy pink colour in the glass. So much body and texture! Fresh acidity with a wild raspberry, lemon and peach profile. Made in tiny quantities.
Notes on the Winemaker: Morgane from Burgundy and Christian from Australia are the duo behind Domaine Dandelion near Saint-Romain in the Côte de Beaune, Burgundy. They work 2.2 hectares of Aligoté, Gamay and Pinot Noir vines by horse or hand. Organic and Biodynamic techniques are used in the vineyard and nothing is ever added to the wines. The labels are made at an old paper mill and include pressed flowers.
