Winemaking: Organic Pinot Noir and Gamay grapes were harvested by hand. Direct press before fermentation in concrete tank with indigenous yeast. Bottled before this process was complete in order to create fizz in the bottle (Ancestral winemaking technique - Pet Nat). No filtration, fining or added sulphur.
This Wine: Natural sparkling white wine made in the Pet Nat style. A lot calmer and with more precision than the 2024 vintage thanks to a slower fermentation. Refreshing acidity with orchard and citrus fruit.
Notes on the Winemaker: Morgane from Burgundy and Christian from Australia are the duo behind Domaine Dandelion near Saint-Romain in the Côte de Beaune, Burgundy. They work 2.2 hectares of Aligoté, Gamay and Pinot Noir vines by horse or hand. Organic and Biodynamic techniques are used in the vineyard and nothing is ever added to the wines. The labels are made at an old paper mill and include pressed flowers.
