Winemaking: Organic Pinot Noir and Gamay grapes were harvested by hand. Semi-carbonic maceration and fermentation with indigenous yeast. Aged in old wooden barrels. Bottled with no fining, filtration or added sulphur.
This Wine: Natural red wine with a light to medium body. Bright acidity and fresh fruit flavours of raspberry, cherry and blueberry. Some volatile acidity brings lively energy to the proceedings. Drink slightly chilled.
Notes on the Winemaker: Thierry Puzelat is a local legend in his region of Touraine in the Loire Valley and his domain Clos du Tue-Boeuf has been organic since 1996. His daughters Zoe and Louise are now taking over the reigns. The blend of grapes in each cuvée often differs year to year as do the wines themselves and that's just how we like it.
