Winemaking: Pinot Noir, Chardonnay and Pinot Meunier grapes are harvested annually and fermented in barrels with indigenous yeast. This wine is made up of the following vintages; 70% 2022, 10% 2023 and 20% of perpetual wine from the years 2004 to 2021. Traditional method Champagne winemaking technique. Aged in old oak barrels and then in bottle. Minimal sulphur use.
This Wine: Superb Champagne that offers a beautiful purity of fruit with subtle red berries, white flowers and a hint of stone fruit. Complex and balanced this is a bottle that can be paired with food and should be drunk with patience.
Notes on the Winemaker: Farming a modest 4 hectares across prime parcels in Aÿ, Mareuil-sur-Aÿ, Dizy, and Chouilly, young grower Paul Gosset represents the vanguard of the new Champagne movement. Coming from a historic winemaking lineage spanning 19 generations, Paul pivoted the family estate toward organic viticulture, cover cropping, and biodiversity. In the cellar, he adopts a low-intervention philosophy: relying exclusively on spontaneous fermentations from indigenous yeast, aging base wines in old oak barrels, and keeping dosages very low or zero. The resulting cuvées are textural, mineral-charged, and gastronomic. These are soulful, terroir-driven bubbles that throw out the corporate playbook, offering incredible energy, precision, and a window straight into the chalky soils of the Marne Valley.
