Winemaking: Organic/Biodynamic Pinot Noir and Pinot Beurot grapes from 50 to 90 year old vines were harvested by hand. 50% underwent direct press whilst the rest were given a 3 day maceration. Fermented with indigenous yeast and then aged in old barrels for 2 years. Bottled with no filtration or fining and just a touch of sulphur.
This Wine: Marsannay is a region of Burgundy where rosé has been a tradition for over 100 years but some time ago, Sylvain set out to create one of the best rosé wines in the world. You can judge for yourself if he has achieved this. Red berry fruit (that has developed perfectly) shines alongside brilliant acidity. The winemaker recommends now until the end of 2025 as the perfect drinking window for this unique wine.
Notes on the Winemaker: Sylvain Pataille is an expert Burgundian winemaker who independently consults for over 20 other producers in the region but also uses biodynamic practices to farm his own 17 hectares in and around the Marsannay appellation. He has the rare ability to create reds and whites of equal prestige (and even rosé too) and uses minimal sulphur and new oak.
