Winemaking: Biodynamic grapes grown on clay soils were harvested by hand. Pinot Noir underwent whole bunch maceration for 4 weeks whilst other varieties were de-stemmed and macerated for 3 months. Fermentation with indigenous yeast. Bottled with no filtration, fining or added sulphur.
This Wine: Light bodied blend of red Jura varieties that is all about fresh red fruit. The easiest style that Stéphane Tissot produces but that doesn't take anything away from this bottle as it's absolutely delicious!
