Winemaking: Organic Procanico grapes grown on volcanic soils were harvested by hand and fermented on the skins in fibreglass tanks for 20 days. Half way through this process, 50% of the wine was pressed into chestnut barrels to complete fermentation and age for 10 months. The rest was aged in tank and then blended together. All fermentation with wild yeast. No fining, filtration or added sulphur.
This Wine: Natural wine that displays more of a definitive skin contact character compared to Ortaccio Bianco 2021. When Massimo was 14 (!) years old, his grandfather used to gift him 365 bottles of skin contact Procanico. He remembers this wine so vividly and the aim is recreate it with this particular cuvée. Complex and rich with fresh acidity and an interesting note of orange sherbet. Best served with food. Will age very well.
Notes on the Winemaker: Massimo Antonuzi was in his grandfather's vineyard at the age of 12 learning how to work the land in this part of Lazio near Lake Bolsena. He has accumulated decades of winemaking knowledge and family traditions and now with help from his partner Patrizia Montanari he produces natural wines with a true sense of place.
