Winemaking: Organic grapes grown on volcanic soils were harvested by hand. The Procanico was fermented on the skins for 2.5 weeks. The Grechetto and Malvasia underwent direct press into fibreglass tanks. All fermentation with wild yeast. Aged for 9 months in old barrels. No fining, filtration or added sulphur.
This Wine: Natural wine that sits somewhere on the spectrum between white and orange. Lively acidity along with melon and citrus fruits followed by a long, saline finish. Great by itself but really shines alongside seafood.
Notes on the Winemaker: Massimo Antonuzi was in his grandfather's vineyard at the age of 12 learning how to work the land in this part of Lazio near Lake Bolsena. He has accumulated decades of winemaking knowledge and family traditions and now with help from his partner Patrizia Montanari he produces natural wines with a true sense of place.
