Winemaking: Organic grapes were purchased from an organic grower in the Languedoc. Each variety is vinified individually in a combination of cement and steel tanks before blending. Bottled 6 months later with no fining, filtration or added sulphur. 

This Wine: Natural red wine, light in body but with a lovely depth of complexity. Packed with an assortment of bright fresh fruit and balanced by darker, earthy notes with subtle herbs and spice. A unique, Loire take on a southern French red wine. Drink slightly chilled.

Notes on the Winemaker: Anne Paillet is a negotiant winemaker in the Loire valley but sources her fruit from the south of France in the Gard department of the Languedoc where she buys the entire annual yield from organic grower Christopher Beau. With a focus on producing light and fresh styles of wine, Anne harvests early and uses a variety of different winemaking techniques to achieve her goal.
