Winemaking: Organic Riesling grapes from a single vineyard were harvested by hand. Fermentation with indigenous yeast to create a base wine which was then re-fermented in bottle (traditional method sparkling wine, Champagne method). Rested for 4 years on the lees. Minimal sulphur use.

This Wine: The unique opportunity to drink an aged Riesling made in the UK! Sparkling wine made in the Champagne method. This is dry, rich and round with a savoury and toasty character. Still displaying amazing acidity alongside citrus and mineral flavours. Complex and best served with food.

Notes on the Winemaker: Charlie Herring is a fictional character created by the father of winemaker Tim Phillips. The wines are made with grapes grown in a 19th century walled garden near the town of Lymington in Hampshire. This helps maintain much needed heat in the vineyard. He calls it his Clos Paradis!
