Winemaking: Organic Sauvignon Blanc grapes were harvested by hand. Direct press before fermentation with indigenous yeast.  No fining, filtration or added sulphur.

This Wine: Wow, this is a special expression of Sauvignon Blanc. Dark oxidative notes of bruised apple are balanced exquisitely with candied lemon. A touch of CO2 uplifts everything further and brings a mineral, seltzer-like edge to the proceedings. It's round but fresh, not an easy achievement. Would work perfectly with fish.

Notes on the Winemaker: Having previously sold his grapes to other natural winemakers in and around his region of Touraine, JC decided to make his own wine in 2019 and hasn't looked back since. He works with Loire grape varieties such as Sauvignon Blanc, Menu Pineau, Pineau d'Aunis and Côt and produces under the radar natural wines that are full of life and character.
