Winemaking: Organic grapes were harvested by hand. Aligoté grapes were macerated whilst the Sauvignon and Chardonnay were pressed directly. Fermentation with indigenous yeast in stainless steel tanks. Bottled with no fining or filtration and just a touch of sulphur.
This Wine: A new wine from the De Moors which replaces their "Sans Bruit" cuvée from yesteryear. The Sauvignon Blanc grapes come from the famous Saint bris appellation in Burgundy are are combined with the textured Aligoté and lean Chardonnay to create something quite unique. Very small production.
Notes on the Winemaker: Alice and Olivier de Moor produce sublime white wines in the Chablis village of Courgis in Northern Burgundy. They have created a serious reputation for themselves which now means the wines are like gold dust. You can expect precision and finesse.
