Winemaking: Organic Sauvignon Blanc grapes were harvested by hand and fermented with indigenous yeast in stainless steel tanks. Aged in old barrels for 11 months. Bottled with no fining, filtration or added sulphur.
This Wine: Laurent has developed a reputation for producing Sauvignon Blanc that displays more discreet varietal characteristics and this is another fine example. This comes from his oldest vines and delivers a more intense and elegant wine that his famous 'Lucky You' cuvée. Rich but with balancing acidity, this is a great wine to pair with fish or chicken dishes.
Notes on the Winemaker: Laurent Saillard worked in the restaurant world before he found his calling in natural wine. He has created quite a buzz for himself in the eastern part of the Loire valley where he works with native grape varieties such as Sauvignon Blanc, Pineau d'Aunis and Gamay.
