Winemaking: Organic Sauvignon Blanc grapes grown on silex and flint soils were harvested by hand. Slow press before fermentation with indigenous yeast in old barrels. Aged on the lees for one year. No fining, filtration or added sulphur sulphur.
This Wine: Natural white wine with a medium body. As the name suggests, this is a cuvée known for its profoundly mineral character which brings a smokey and salty vibe to the opulent citrus and stone fruits flavours. Herbal notes provide extra complexity. Food friendly wine with plenty of texture.
Notes on the Winemaker: Etienne Courtois is taking over the running of Les Cailloux du Paradis winery from his father Claude. The family produce natural wines near the village of Cheverny in the Loire Valley and the focus is very much on indigenous and rare grape varieties, some of which are very unique to this area. No synthetic chemicals are used in the vineyard. Extended barrel ageing is preferred in the cellar which usually results in precise and powerful wines.
