Winemaking: Organic Sauvignon Blanc and Chardonnay grapes were harvested by hand and fermented with indigenous yeast in stainless steel tanks. Aged in old barrels. Bottled with no fining, filtration or added sulphur.

This Wine: Natural white wine with a medium body. This has now become somewhat of an iconic cuvée from Laurent. It showcases a lovely balance each grape variety's characteristics. Fresh acidity but with some roundness and texture. Flavours of citrus, white peach and some grassy notes. A great vintage!

Notes on the Winemaker: Laurent Saillard worked in the restaurant world before he found his calling in natural wine. He has created quite a buzz for himself in the eastern part of the Loire valley where he works with native grape varieties such as Sauvignon Blanc, Pineau d'Aunis and Gamay.
