Winemaking: Organic Savagnin grapes were hand harvested and underwent direct press in whole bunches. Aged for six years in topped up barrels (Ouillé - non-oxidative winemaking). Bottled in 2024 with no filtration, fining or added sulphur. Aged for a further year in bottle.

This Wine: Natural white wine with a powerful character. This really blew us away! Such a beautiful intensity of lemon fruit with a biscuity, pastry-like edge. I am trying to avoid using the term "Lemon Merengue Pie" as I read it on another website but they have absolutely nailed it with that description. But suddenly you can see the wine in a totally different light with curry leaf and other spicy flavours. The texture was amazing, almost chewable. A touch of integrated, volatile acidity brings perfect balance. Absolutely singing right now (September 2026). Would be great with cheese.  

Notes on the Winemaker: Philippe Bornard founded his domain in 2005 in the Jura village of Pupillin. The wines he produced became iconic, both for their striking orange fox labels and their wild, expressive character. Philippe retired in 2017 and his son Tony took over the running of the winery after combining it with his own smaller operation to achieve 11 hectares of vines.
