Winemaking: Organic Savagnin grapes were hand harvested and underwent direct press. for four years, the wine was aged in barrels that were not topped up (oxidative winemaking technique). Bottled with no filtration, fining or added sulphur.
This Wine: Natural white wine with an intense and powerful character. Made in the traditional oxidative style, this isn't far off the potency of a Vin Jaune. Expect nuts, dried yellow fruits, spice and umami.
Notes on the Winemaker: Philippe Bornard founded his domain in 2005 in the Jura village of Pupillin. The wines he produced became iconic, both for their striking orange fox labels and their wild, expressive character. Philippe retired in 2017 and his son Tony took over the running of the winery after combining it with his own smaller operation to achieve 11 hectares of vines.
