Winemaking: Organic Savagnin grapes from vines grown on red marl soils were hand harvested. Fermented with wild yeast. Aged for 24 months in barrel that were topped up (Ouillé style, not oxidative). No fining, filtration or added sulphur.
This Wine: Natural white wine with a full body and rich character. You can expect plenty of density and texture here. Made in the Ouillé style but there are subtle nutty and savoury notes that reminds you this is still a white from the Jura. Best served with food.
Notes on the Winemaker: Kevin Bouillet is a young winemaker in the bvillage of Pupillin who has been developing a following since he started working his 4 hectares of vines in 2018. He previously worked with the esteemed Domain de la Tournelle and a similar vein, he works with meticulously and precisely which is reflected in the wines
