Winemaking: Organic Savagnin grapes were hand harvested and spontaneously fermented with indigenous yeast in old oak barrels that were not topped up. This encouraged the growth of a layer of flor which the wine was aged under for 6 years. Bottled with no filtration or fining and just a touch of sulphur.

This Wine: Vin Jaune, the speciality of the Jura. Big and intense with umami, nutty and dried fruit flavours. We love drinking a bottle at Christmas alongside some Comté. Will also age for a very long time. 

Notes on the Winemaker: Gérard and Christine Villet have been running the family winery for nearly 50 years in the famous village of Arbois in the Jura. They worked to achieve organic certification as early as 1988 and now take a hands of approach in the cellar where they produce classic Jura styles.
