Winemaking: Organic Savagnin grapes were hand harvested and spontaneously fermented with indigenous yeast in old oak barrels that were not topped up. This encouraged the growth of a layer of flor which the wine was aged under for 6 years.

This Wine: Vin Jaune (yellow wine) is the iconic wine of Jura. Made in a deliberate oxidative style, this is rich and complex with umami flavours and high acidity. Pair with Comté cheese!
