Winemaking: Organic Silvaner grapes were harvested by hand. 4 hours of skin contact before a long and slow fermentation with indigenous yeast. Bottled with no fining, filtration and just a small amount of added sulphur.
This Wine: Wow, what a wine! This part of Germany has a reputation for superb Silvaner and this bottle shows you why. Natural white wine with a profound mineral character with intense citrus and stone fruit flavours. Amazing balance and tension. Not dissimilar to some of high end Chenin Blancs from the Loire. Incredible to think 2022 was Martin's first vintage!
Notes on the Winemaker: Martin Hirsch grew up in Bavaria and lived for many years in Frankfurt before realising that he really belonged in nature among the vines. He studied with Franz Weninger in Austria and Hungary before returning to his homeland and settling in the village of Kitzingen in the Franken region. He farms 2.5 hectares of vines are works closely with local winemakers such as 2Naturkinder under a collective known as New Kitz
