Winemaking: Biodynamic Nebbiolo and Slarina grapes were harvested by hand. The Slarina underwent direct press and then the Nebbiolo grapes were infused into this juice for 5 days. Fermentation with indigenous yeast in concrete where the wine then aged for 6 months. Bottled with no fining, filtration or added sulphur.
This Wine: Deirdre wanted to create a chillable red and that's excatly what she has achieved. Light and delicate wine but with a nice complexity of strawberry, cherry, herbs and a touch of smoke. This screams Spring and we cant wait to uncork one from the fridge.
Notes on the Winemaker: Dierdre O'Brien & Maurizio Caffer previously lived in London before setting up a biodynamic farm in the Monferrato region of Piemonte, north west Italy. They make rustic and honest wines and it's great to see how much they champion local grape varieties that are sometimes on the verge of extinction.
