Winemaking: Organic Solaris grapes were harvested by hand. De-stemmed before 8 week maceration and fermentation with indigenous yeast. Aged in stainless steel tanks for 8 months. No fining or filtration. Tiny amount of added sulphur.

This Wine: Natural orange wine from Leicestershire! This is complex and savoury with medicinal notes along with ginger and other spices. There is a smokey, earthy note that reminds us of Mezcal! Beautifully balanced and precise. Only 750 bottles produced.

Notes on the Winemaker: Matt Gregory works 3 hectares of vines in the Leicestershire Wolds, not far from Loughborough. He has been farming a variety of international and hybrid grape varieties here since 2020 without use of synthetic chemicals. He produces elegant, approachable and precise wines with a hands-off approach in the cellar and minimal use of sulphur.
