Winemaking: Organic Sylvaner grapes were harvested by hand and underwent fermentation with indigenous yeast. Aged in old barrels for 8 months on the lees and bottled with no filtration or fining and just a touch of sulphur.

This Wine: Natural white wine made from very old vines in the village of Mittelbergheim. An excellent expression of this underrated grape variety with a saline and mineral focus. A touch of maceration brings a pleasing texture. Best served with fish, vegetables or cheese. 

Notes on the Winemaker: Jean-Pierre Rietsch is a natural winemaker in the village of Mittelbergheim, Alsace. His estate has been in the family for seven generations but wasn't used for vine cultivation until the 1970s. All of Jean-Pierre's wines are in very high demand but we particularly love his skin-contact cuvees which is a winemaking method rarely seen in Alsace.
