Winemaking: Organic Syrah grapes from the vines of Le Mazel were harvested by hand. Fermentation with indigenous yeast in fibreglass tanks. The wine was bottled before this process was complete in order to trap fizz inside the bottle (Ancestral winemaking technique - Pet Nat). Aged in bottle on the lees for 12 months. No fining, filtration or added sulphur.

This Wine: Sparkling rosé wine displaying a beautifully deep shade of pink in the glass. A powerful punch of cherries and herbs on the palate with some dark and bitter notes that create complexity. Great aperitif. 

Notes on the Winemaker: Anders Frederick Steen & Anne Bruun Blauert hail from Denmark but settled in the Ardeche to focus on their winemaking dream in back in 2013. Since then they have become one of the most sought after names in the natural wine world. They produce wines that are honest and representative of this wild region. The pair don't look to recreate the same wine each vintage and instead adapt to whatever conditions a new year brings.
