Winemaking: Organic Syrah & Chatus grapes were hand harvested and fermented with indigenous yeast. Only the free run juice from the pressing was used for this cuvée. No fining, filtration or added sulphur. 

This Wine: Natural red wine with a medium body. The Syrah brings black, dusty fruit with that signature pencil shavings note whilst the rare Chatus brings refreshing acidity. Winemaker Laurent believes the variety is related to Mondeuse. Either way, the combination makes for a delicious, easy drinking wine but full of life and character. 

Notes on the Winemaker: Laurent Fell's vineyards sit 500m above sea level in the Cevennes mountains of Ardèche. The elevation helps bring a fresh character to the wines in what is a warm region. He doesn't use any sulphur on bottling yet his wines are clean and approachable.
