Winemaking: Organic Tai Rosso and Garganega grapes were hand harvested and underwent fermentation with indigenous yeast after 2 days of skin contact. The wine was bottled before fermentation had ended in order to create fizz in the bottle (Ancestral winemaking technique, Pet Nat). No fining or filtration and just a small amount of added sulphur.
This Wine: Juicy pink Col Fondo from Vicenza! Always love the arrival of this sparkling wine but it never hangs around for long. Raspberries, lemon and pink grapefruit with fresh minerals. The winemakers are cycling enthusiasts and
Bidon is the Italian name for a water bottle. That's how refreshing this wine is.
Notes on the Winemaker: Giovanni and Simone are 2 friends with a passion for the outdoors who have vineyards near Nanto in the Colli Berici region of Veneto. They are dedicated to restoring the natural balance of the surrounding area and making wine which is true to its roots. The name Fora means 'Out' in local dialect and can refer to someone who is 'out of their mind'. Make of that what you will.
