Winemaking: Biodynamic grapes were hand harvested before fermentation with indigenous yeast in old barrels. Made by traditional sparkling wine method (Champagne style). Aged for 20 months on the lees. Bottled with no filtration, fining or added sulphur.  

This Wine: This is sparkling pink wine made by traditional method so you can expect a rich style with high acidity to match. Crunchy red fruit combines with some subtle stone fruit flavours and nutty aromas. The ageing process has provided extra complexity. Best served with food.

Notes on the Winemaker: Clos Lentiscus is the project of Manel Avinyo who started making wine in 2002 and has worked naturally since 2010. He uses honey from his bees to kickstart the second fermentation in his sparkling wines. His daughter Nuria is now slowly taking over the reins.
