Winemaking: Organic Triomphe and Bacchus grapes grown in Test Valley, Hampshire were harvested by hand. The Triomphe is from 2021 and underwent semi-carbonic fermentation with indigenous yeast before ageing in old barrels for 1 year. This was blended with direct press Triomphe and Bacchus that had been macerated for 2 days (both from 2022 vintage). Bottled in October 2022 allowing fermentation to continue in the bottle which creates the fizz. No fining, filtration or added sulphur.
This Wine: Sparkling red Pet Nat with an addition of white juice from the Bacchus grape. From 40 year old vines that were planted and still farmed by Tim Ayers in Hampshire. Juicy and thirst quenching! Very limited production.
Notes on the Winemaker: Daniel and Nicola Ham were marine biologists before embarking on a natural wine adventure in what may have seemed the most unlikely of regions, Wiltshire! They purchase organic fruit from different plots around the UK and are now making some of the best local wines we have ever tried.
