Winemaking: Organic Vespaiola grapes were harvested by hand. 50% underwent direct press and 50% were macerated for 4 days. Fermentation with indigenous yeast in combination of stainless steel and fibreglass tanks. In Spring dried grapes from the original harvest were added to the wine on bottling to cause second fermentation in the bottle. No fining, filtration or added sulphur.
This Wine: Sparkling white wine made in the local traditional method utilising the indigenous grape variety of the region that was previously used in sweet wine production. This has a lovely concentration of mandarin and lemon flavours with subtle perfumed floral notes. Light and fresh. Great aperitif.
Notes on the Winemaker: Il Ceo means "The Kid" in the local dialect of Davide Andreatta. His mission is to recover and restore old vineyards in and around his local town of Breganze which is just north of Vincenza in Veneto.
