Winemaking: Organic Viognier grapes were harvested by hand and fermented with indigenous yeast, partly on the skins. This was blended with Muscat, Chardonnay and Grenache Blanc grapes sourced from a grower in Gard. Aged in a combination of tinaja (amphora) vessels and old barrels and bottled with no filtration, fining or added sulphur.
This Wine: Natural white wine that has body and structure along with deep stone fruit flavours and a tea-like aroma from the Muscat. Dry and well rounded. A wine with great complexity which makes it a versatile option for pairing with food. Less than 2000 bottles produced.
Notes on the Winemaker: Patricia & Remi Bonneton work in the Ardèche right on the border of the Northern Rhône, close to the famous vineyards of Saint-Joseph. They oversee 2 hectares of vines and also source grapes from friends around France to create some interesting and unique cuvées.
