Winemaking: Biodynamic Xarel Lo grapes from a single plot of 50 year old vines were hand harvested and fermented with indigenous yeast. Bottled before fermentation was complete in order to trap fizz inside the bottle (ancestral method, Pet Nat). Disgorged. No filtration, fining or added sulphur.
This Wine: A deep and complex white Pet Nat made in a more serious style via extended lees ageing. Lemon and green apple flavours are balanced with a strong umami and mineral backbone. Best served with food but can also work as an aperitif. Will age very well also.
Notes on the Winemaker: Ferran Lacruz is a young winemaker in his home region of Penedès, Catalonia who wants to honour the winemaking history and potential future of this region that fell victim to industrialised winemaking in the 1980s. He uses biodynamic practices in the vineyards and never adds anything in the cellar.
