Winemaking: The Xarel Lo grapes come from a single plot vineyard just 1.1 hectares in size that is farmed with biodynamic techniques. The vines were planted in 1982. After manual harvest, grapes are cooled for 24 hours before the juice spends 6 months with the skin. Fermentation with indigenous yeast in stainless steel. Bottled by lunar calendar with no filtration, fining or addition of sulphur.
This Wine: Arguably the best wine produced by Toni Carbo and certainly his most age-worthy. Very hard to get old vintages of this skin contact wine but here is your chance. In our experience this cuvée gets more and more serious with time.
Notes on the Winemaker: Toni Carbó is one half of the esteemed Cava house (with friend Ramon Jané), Mas Candí in Penedés. He started his own project La Salada wit partner Anna Serra in 2012 to focus on making wines like his Grandfather used to. They are some of most sought after as they provide an authentic and honest expression of Catalan terroir.
