Winemaking: The Xarel Lo grapes come from a single plot vineyard just 1.1 hectares in size that is farmed with biodynamic techniques. The vines were planted in 1982. After manual harvest, grapes are cooled for 24 hours before the juice spends 6 months with the skin. Fermentation with indigenous yeast in stainless steel. Bottled by lunar calendar with no filtration, fining or addition of sulphur.
This Wine: The 2022 vintage of one of our favourite La Salada cuvées. This is complex and delicate skin contact wine with great intensity of grapefruit and other citrus fruit flavours. Subtle herbal notes on the finish. A good wine to age but also drinks very well young.
Notes on the Winemaker: Toni Carbó is one half of the esteemed Cava house (with friend Ramon Jané), Mas Candí in Penedés. He started his own project La Salada wit partner Anna Serra in 2012 to focus on making wines like his Grandfather used to. They are some of most sought after as they provide an authentic and honest expression of Catalan terroir.
