Winemaking: Biodynamic Xarel Lo grapes were hand harvested before direct press and fermentation with indigenous yeast in amphora vessels where the wine then aged for 6 months. Bottled with no filtration, fining or added sulphur.
This Wine: Natural white wine with fresh acidity balanced with oxidative characteristics. Lemon, lime green olive, bruised apple and minerals. Something reminds us of dry Riesling. Complex and would suit cheese or fish very well.
Notes on the Winemaker: Clos Lentiscus is the project of Manel Avinyo who started making wine in 2002 and has worked naturally since 2010. He uses honey from his bees to kickstart the second fermentation in his sparkling wines. His daughter Nuria is now slowly taking over the reins.
