Winemaking: Organic Xarel Lo grapes were hand harvested foot trodden in a stainless steel tank before fermentation with indigenous yeast on the skins for 7 days. Then the grapes were pressed into old barrels where the fermentation continued. Aged in barrel for 10 months. Bottled with no fining, filtration and just a touch of added sulphur.
This Wine: Skin contact wine with an amazing intensity of lemon and dried herbs on the nose. This would partner very well with white fish, chicken or salad/vegetable dishes. A special wine that is delicately aromatic.
Notes on the Winemaker: Amós Bañeres was a pharmacist in a previous life before relocating to Vilafranca in the Penedès region of Catalonia where he works out of a tiny winery. He grows indigenous grape varieties usually used for Cava production and makes wine with as little intervention as possible.
