Winemaking: Organic Zibibbo grapes were hand harvested and dried in the sun, being turned every couple of days to avoid rot. After crushing, the juice remained on the skins for 2 months before being pressed into demi-johns that remained outside for 1 year. No fining or added sulphur.
This Wine: Without a doubt, one of the best sweet wines we have ever tasted. The winemaker Francesco believes this is the wine that truly represents Pantelleria and predates the Passito wine style that the island is famous for. You can expect almost everything in this complex and wild wine. Sweet and savoury at the same time with smokey, volcanic tones. Will age very well for a long time to come. Only 500 bottles produced.
Notes on the Winemaker: Tanca Nica is the natural wine project of
Francesco Ferreri & Nicoletta Pecorelli who farm just 3 hectares of vines the small and remote island of Pantelleria. Located off the coast of Tunisia, the island is party of Italy and boasts Sicilian cultural traditions. The wines from Tanca Nica are wild but precise and complex, displaying all the signs of sun baked land and Mediterranean influence.
