Winemaking: Organic Zibibbo grapes were hand harvested before being crushed and macerated on the skins for 2 weeks in amphora vessels. Fermentation with indigenous yeast. Pressed back into amphora for 8 months. Bottled with no filtration, fining or added sulphur.

This Wine:  Skin contact Zibibbo from the remote, sun-drenched island of Pantelleria. This is wild and alive with tropical fruit flavours, heavy spice and floral aromas. Complex and best served with food. Should age well too.
