Winemaking: Organic Zibibbo grapes from a single plot of vines that are over 100 years old were hand harvested. 20 day maceration and fermentation with indigenous yeast in chestnut barrels. Aged in barrel left outside but out of the sun to allow temperature changes to affect the wine. Aged in a mixture of old oak barrels and stainless steel tanks. No filtration, fining or added sulphur.
This Wine: A very special cuvée from Tanca Nica which displays strong saline qualities and integrated oxidative notes alongside all the intense stone fruit complexity you expect from this winery. Only available in magnum and there were just 300 produced.
Notes on the Winemaker: Tanca Nica is the natural wine project of Francesco Ferreri & Nicoletta Pecorelli who farm just 3 hectares of vines the small and remote island of Pantelleria. Located off the coast of Tunisia, the island is party of Italy and boasts Sicilian cultural traditions. The wines from Tanca Nica are wild but precise and complex, displaying all the signs of sun baked land and Mediterranean influence.
