Winemaking: Organic Pinot Gris grapes were harvested by hand. 10 day whole bunch maceration and fermentation with indigenous yeast in fibreglass tanks. Bottled with no filtration, fining or added sulphur.
This Wine: Skin contact wine that shows an amazing pinky, peach colour in the glass. Very high acidity with tart citrus, red fruit flavours and a refreshing mineral edge. Wild and full of energy.
Notes on the Winemaker: Jacques Fevrier is situated in the Muscadet region where he settled after working and studying winemaking around the world. He mainly works with indigenous Loire grape varieties and only used sulphur in extreme situations.
