Most alcohol-free alternatives rely heavily on artificial de-alcoholisation processes or sugary syrups that strip away the texture and life of the drink.

Enter Romain des Grottes, a natural winemaker based in Beaujolais who is single-handedly rewriting the rules of what an alcohol-free wine alternative can be. Rather than trying to strip alcohol out of finished wine, Romain works meticulously with pure, organic grape juices, infusing them with complex botanicals, wild herbs, and fruits from his own land. They have zero artificial additives and are built to be enjoyed with food.

Nyctalope 2025

• The Style: Lightly sparkling, herbal, and beautifully bitter white grape botanical blend.

• The Lowdown: This is the third instalment of Romain's brilliant zero-alcohol range. Utilising a base of white Malvasia grape juice, Nyctalope is infused with a delicious botanical lineup: bitter orange, Szechuan pepper, mugwort, lemon verbena, yarrow, and turmeric. It is lightly sparkling and stands out as the least sweet creation from his cellar so far. It has a wonderful savoury edge that makes it an elite aperitif or dinner pairing.

This is classic, energetic Beaujolais at its absolute rawest and purest. Gamay grapes, fermented naturally with indigenous yeasts and bottled without fining, filtration, or added sulphur, it's juicy, vibrant, and packed with bright red berry fruit and that signature, joyful crunch.
