Winemaking: Organic Pinot Blanc grapes grown in Essex were harvested by hand. Foot stomped before a 9 day maceration period. Fermentation with indigenous yeast. The wine was bottled before this process was complete in order to trap fizz inside the bottle (ancestral winemaking technique - Pet Nat). Undisgorged. No fining, filtration or added sulphur.
This Wine: A brand new wine which is the result of a collaboration between Offbeat and Paris Barghchi. This is a sparkling, skin contact wine with plenty of acidity, minerality and texture. The flavour profile is dominated by apple and lemon fruit with a touch of something tropical thrown in for good measure. Only 500 bottles produced.
Notes on the Winemaker: Daniel and Nicola Ham were marine biologists before embarking on a natural wine adventure in what may have seemed the most unlikely of regions, Wiltshire! They purchase organic fruit from different plots around the UK and are now making some of the best local wines we have ever tried.
